OUR NEW YEAR'S PARTY PICKS

Ricotta and Oregano Empanadas:
Ingredients
1/2 cup fresh ricotta 
1/4 cup grated parmesan 
50g soft goat's cheese 
1 tsp lemon rind, finely grated 
2 tsps oregano leaves, chopped 
1 egg, lightly beaten 
sprigs of oregano to dress  

For the pastry
1/2 cup olive oil 
3/4 cup water 
2 1/2 cups plain flour
1/2 tsp salt 

Method
1. Heat the oven to 200 degrees celcius. 
2. Combine the ricotta, parmesan, goat's cheese, lemon zest, and oregano in a bowl. Season to taste, and set aside. 
3. To create the pastry, put the oil and water over high heat until boiling. Remove it from the heat an mix in the flour and salt and knead until smooth. 
4. Roll out the dough until 3mm thick, then using a 10cm round cutter, cut ten circles. 
5. Place one teaspoon of the ricotta mix in the centre of each pastry round, brush the edge with eggs and fold over, sealing the edges together with your fingertips. 
6. Line the empanadas on a tray, brush with the egg mix, and top with a sprig of oregano. 
7. Cook for 20 minutes or until golden. 
8. Enjoy!
