DRINK AND DINE LIKE A LOCAL: SEAFOOD BRUSCHETTA

Ingredients:

1 baguette, sliced and grilled
1 tomato diced
1 red onion, diced
Olives, chopped
Parsley, diced
Prawns, shelled and heads removed (keep discards in a bowl to the side)

Method:


1. Pan-fry the prawns.


2. To make the prawn and chilli oil, slow cook the shells and heads with chilli and oil. Drain liquid.


3. To make the salsa, mix the tomato, onion, parsley, olives and garlic.


4. To assemble bruschetta, place bread on plate, top with salsa mix, drizzle with prawn and chilli oil, and top with a panfried prawn.


5. Enjoy!
