Drink and Dine Like Local: Grilled Vegetable Stack
Ingredients:
1 eggplant
1 red capsicum
1 zucchini
4 large flat mushrooms
1 red Onion
1 garlic clove, crushed
Chives, diced
Basil
Ricotta cheese
Balsamic Vinegar
Cracked Pepper
Method:
1. Slice up vegetables
2. Drizzle vegetables with olive oil
3. Grill the vegetables on your BBQ until tender
4. In a bowl, combine ricotta, garlic, chives, and basil.
5. To assemble the stacks, place a slice of eggplant on each plate, layer it with ricotta mix, then zucchini, capsicum, mushroom, another layer of ricotta mix, and then onion.
6. To finish, drizzle with balsamic vinegar and cracked pepper.
7. Enjoy!
